Maryanne's Macaroons

Maryanne Appel, long-time board member of the West Chester -based group CARE, is a steadfast friend of animals in Pennsylvania. And Maryanne makes a mean macaroon. Give this easy and delightful recipe a try; you’ll be a believer.
Ingredients:
½ cup organic canola (rapeseed) oil
¼ cup coconut milk
½ teaspoon vanilla extract
½ cup whole wheat flour
1 cup all-purpose white flour
1 cup powdered sugar
1 11-oz. bag shredded coconut
½ teaspoon baking soda
¼ teaspoon sea salt
To prepare:
Sift the flour into a large bowl. Set aside.
In another large bowl, mix oil, coconut milk, and vanilla extract.
Fold in all of the dry ingredients (mix together first).
Pressing gently, form the mixture into roughly shaped balls, about 1 ½ tablespoon size for each.(The consistency will be rather dry, but this is normal.)
Place the formed balls 1/2" apart on a large nonstick cookie (baking) pan.
Bake in preheated 350 degree oven (that’s 180 C or gas mark 4) for 12 minutes.
Makes approximately two dozen scrumptious cookies. Now, share!
